Olive oil - one tablespoon
Onion (1/2 medium) - chopped
bay leaves - 2
ground cumin - 1 teaspoon
dried oregano - 2 tablespoons
salt - 1 tablespoon
celery (chopped) - 2 stalks
green bell peppers (2) - chopped
jalapeno peppers (2)- chopped
cloves garlic (chopped) -3
green chili peppers (2 cans or 4 ounce) - chopped and drained
vegetarian burger crumbles - 12 ounce
whole tomatoes – (3 cans or 28 ounce) peeled and crushed
chili powder – one fourth cup
ground black pepper - one tablespoon
kidney beans (1 can or15 ounce)- drained
garbanzo beans (1 can or 15 ounce) -drained
black beans (1 can or 15 ounce)
whole kernel corn (1 can or 15 ounce)
Directions to make
Take a large pot and pour olive oil onto it and place the pan over medium heat. Now put the onions and then it stir those onions. Now season the onions with cumin, salt, oregano, and bay leaves. Cook the onions till they become tender and when they will turn soft mix green Chile peppers, garlic, jalapeno peppers, green bell peppers, and celery. When all the veggies are heated and mixed properly add vegetarian burger crumbles in the mixture. Now reduce the heat and bring it to low. Cover the pot and leave it in simmer for about five minutes.
Now mix the chopped tomatoes into the pot. The next step is to season chili using pepper and chili powder. When you have seasoned the chili, stir in all the beans like the black beans, garbanzo beans, and kidney beans. Now boil the mixture in low heat and leaving it to simmer for about 45 minutes. Occasionally, stir in the corns. Stop cooking when dish is done.
